Ingredients for 6 portions
1 cup of dry garbanzo beans
6 cups of water
½ medium red onion finely chopped
¼ red bell pepper finely chopped
¾ cup of cilantro leaves chopped
½ cup of extra virgin olive oil
¼ cup of white wine vinegar
1 Tbs. of honey
Coarse sea salt
In a stock pan over medium heat, add the water and the garbanzo beans and cook covered for 1 hour, until tender. Turn off the heat, strain the garbanzos and let them cool down. In a bowl, emulsify the oil, vinegar and honey. Put the garbanzos in a bowl, add the onion, pepper, cilantro, salt and the the vinaigrette. Combine everything. Cover and refrigerate. Serve cold.
