Ingredients for 6 servings
1 cup of cooked and
drained white beans
1 cup of cooked and
drained red beans
1 cup of green beans, cut
and blanched for 3 minutes in boiling salted water
1 cup of chopped onion
1 cup of chopped
parsley
1 garlic clove, minced
1 cup of vinaigrette made
of 2/3 cup of extra virgin olive oil, 1/3 cup of red wine vinegar, 2 teaspoons of
coarse sea salt, ½ teaspoon of freshly ground black pepper and 2 tablespoons of
honey.
Preparation
In a bowl, mix all
ingredients.
In a small bowl, mix
the ingredients for the vinaigrette until emulsified.
Add the vinaigrette to
the salad and let marinate in the refrigerator for at least 12 hours.
Serve cold.
