Ingredients for 4 portions
6-8 romaine lettuce leaves washed and chopped
1 tomato cut into 8 wedges
¼ cup of thinly sliced onion
1 cup of washed and cut broccoli "trees"
¾ cup of carrot cut into strips
¼ cup coarsely chopped green pepper
1/3 cup vinaigrette (prepared with 4 tablespoons olive oil, 2 tablespoons balsamic vinegar, 1 tablespoon honey and salt to taste.)
Preparation
In a bowl put the ingredients in this order: lettuce, tomato, onion, broccoli, carrot and paprika.
In a bowl mix all the ingredients for the vinaigrette until emulsified.
Serve the salad on individual plates or bowls with 2-3 tablespoons of vinaigrette.
