Grilled Pineapple Guacamole*

Ingredients for 2 ½ cups
2 slices of pineapple
PAM cooking spray
2 ripe avocados, peeled and seeded
Coarse sea salt
¼ cup finely chopped cilantro leaves
¼ cup finely chopped chives
Juice of half a lemon
Spicy chipotle sauce

Preparation
Spray a grilling pan with PAM cooking spray and place to warm over medium-high heat.

Put pineapple slices to roast and cook one minute per side. Set aside.

Put the avocado flesh into a molcajete with the rest of the ingredients except pineapple and pestle until desired consistency.


Dice grilled pineapple. Add it to guacamole and stir.
